Nicolangelo Marsicani began his work as an olive miller in 1996, carrying out milling both for his own production and for third parties. He trained in olive oil tasting at Oleum under the guidance of Gaetano Avallone and, in a short time, improved his olive oil production, which soon reached the top ranks of numerous national and international awards. He continued to refine his skills in organoleptic evaluation at Oleum together with Michele Siniscalchi and Marco Rizzo, developing a transformation methodology already tested with Gaetano Avallone.
A professional taster and member of Oleum’s professional tasting committee, he teaches in tasting courses and carries out various educational and outreach activities in the olive oil sector. He collaborates in the organization of international events and awards, including Olivitalymed and the Sorrento International “Olio delle Sirene” Prize, and serves as a judge in numerous national and international competitions.
He contributes to improving the olive oil production of important companies in Italy and abroad, guiding them in the creation of oils with complex aromas and fresh elegance.
