CAMPO ALTO ESTATE – SANTO ANTÔNIO DO PINHAL
In the tourist region of Serra da Mantiqueira, in the state of São Paulo, the olive trees planted by Sabiá have adapted remarkably well, becoming an integral part of the enchanting landscape and producing a mountain olive oil with exceptional flavor and aroma.
With 17 hectares planted in 2014, the Campo Alto estate began commercial extraction in 2020, receiving numerous international awards from its very first years of activity.
SABIÁ DA VIGIA ESTATE – ENCRUZILHADA DO SUL
Located in a southeastern hilly region, Encruzilhada do Sul is the municipality with the largest area dedicated to olive cultivation in all of Brazil.
The 440-hectare farm includes 110 hectares of olive trees, planted between 2018 and 2019, as well as 5 hectares of vineyards planted between 2021 and 2023. The first harvest took place in 2022. The well-drained, rocky soil is ideal for cultivating both olive trees and grapevines.
In 2023, a new olive mill was inaugurated on the estate: an underground facility unprecedented in the Brazilian olive oil sector, equipped with Mori-TEM, Amenduni and Alfa-Laval machinery developed specifically for the site, featuring a PCL 4.0 system that allows full control of the extraction process, resulting in an innovative and sustainable project.
PRODUCT QUALITY
Both estates have their own in-house olive mill, allowing immediate extraction after harvesting and thus ensuring product excellence.

In Santo Antônio do Pinhal, a selected team of Masters of Olive Oil invites visitors to embark on an exclusive journey into the refined world of olive cultivation.
From planting to olive oil extraction, through every stage of the olive tree’s growth, each step of the olive-growing craft is revealed with expertise and elegance.
Guests are invited to enjoy a guided tasting, discovering a range of exceptional oils. Through a sensory evaluation, visitors explore delicate aromas, complex flavors and subtle nuances that define true quality, gaining an appreciation for a premium product that stands apart from the conventional oils known to most consumers.
In 2026, a Neapolitan-style pizzeria was also inaugurated, curated by renowned Italian pizzaiolo Dani Branca, ranked among the world’s top 100 pizza makers. Here, every pizza is expertly paired with our premium oils, offering a refined gastronomic experience in a unique architectural setting: the wooden, stone and glass structure allows the landscape to flow into the space, creating a magical atmosphere that blends indoor intimacy with immersion in nature.
At the heart of this experience lies an extraordinary treasure for Brazilians: a 300-year-old olive tree, originally planted by the Spanish in Uruguay and now entrusted to the care of the Sabiá olive oil company in Santo Antônio do Pinhal. Walking among the olive groves, discovering cultivation secrets, visiting the mill and taking part in a refined tasting opens the door to a world of sensations.
