CaVi is a project that originates from the union of two agricultural histories. It is connected to olive cultivation and the production of extra virgin olive oil. The name derives from Carlo and Vincenzo, the grandfathers who originally owned the olive groves, and represents the continuity of a work carried out over time.
The activity takes place in Vieste, Apulia, in a context characterized by a mild Mediterranean climate, favorable to the growth and ripening of olives. In this environment, production is part of a well-established agricultural practice, maintained and adapted over the years.
CaVi uliveti is a family-run business, where the experience developed over time is carried forward through direct management and a concrete knowledge of the territory. The project stems from the intention to give continuity to this path, maintaining a clear connection with its origins and with the work carried out in the olive groves.
The activities related to the olive groves and the production of extra virgin olive oil are organized in a way that ensures quality in the final result. The olives are harvested and processed within a short time, using cold extraction, in order to preserve their organoleptic characteristics, with a defined aromatic profile consistent with the raw material.
Quality is the direct result of the choices made throughout the entire production chain, from the care of the olives to processing. CaVi uliveti therefore develops as a project that maintains a direct link with its roots, carrying forward a careful approach focused on quality and on enhancing the final product.
